- 6 plum tomatoes – halved
- 2 green chilies deseeded and finely chopped
- 8 garlic cloves – peeled 7 sliced
- ½ red onion finely diced
- Handful of coriander finely chopped
- 1 tbsp olive oil
- Salt & pepper
- Place the tomatoes cut side up on a baking tray and season with salt and pepper.
- Place them under the grill for about 15 minutes until chard.
- In a frying pan and add the olive oil and fry the chiles & garlic and fry until the garlic is golden.
- Place the tomatoes, chiles & garlic into a food processor along with all the other ingredients and pulse until all combined but still chunky.
